Ya'll. I think I'm in love with cashews.

No seriously, cashews make amazing replacements for the creamy texture of dairy. From vegan macaroni and cheese to vegan lasagne my heart is bursting with love for the cashew.

Not only are cashews delicious, they are full of vitamins, minerals, and antioxidants. Cashews are loaded with vitamins E, K, and B-6 and with minerals like copper, phosphorus, zinc, magnesium, and iron.

The copper and iron in cashews work together to help the body form and use red blood cells. This keeps blood vessels, nerves, and the immune system functioning properly.
